Question: What's the keyboard command for showing all open programs?
There is none that I know of. You can set a key combo for Mission Control, but that will only show open windows, not all running applications. Easiest way to see all open programs is just look at the Dock. All running apps will have a mark by the name.

Command + Tab held down together shows all running programs on your Mac.
Keep holding Command and tap Tab to switch between programs.
