How do I tell someone how to disable iPhoto from automatically taking over their pictures and how to find and liberate the high-res versions of their images so they can use Bridge and Photoshop?

1. Stopping iPhoto from launching/importing will depend on the version of the OS and iPhoto. In Leopard on down, Launch Image Capture and choose either NO APPLICATION or the application of choice you want to import with in Image Capture's prefs.
In Snow Leopard this option is gone from Image Capture, but can be set to NO application or Image Capture in iPhoto '09.

2. You can export out the high res originals using iPhoto's Export command.
